糟卤是用科学方法从陈年酒糟中提取香气浓郁的糟汁,再配入辛香调味汁,精制而成的香糟卤体态透明无沉淀,突出陈酿酒糟的香气,鲜咸口味适中,荤素浸蘸皆可,清节蒸、糟溜、保汤、炒菜皆宜。
用料分量:香糟一斤(即酒糟),黄酒四斤,糖五两;盐三两,桂花少许。
加工方法:先将酒糟用黄酒化开,加入糖、盐、桂花调和,静置半刻,使糟渣下沉,撇取上面的卤汁,再用纱布过滤即成。
